Port Wine-Blue Cheese Ball Recipe

Port Wine-Blue Cheese Ball Recipe

Serves 15 to 20

4 ounces blue cheese, crumbled (1 cup)

4 ounces mozzarella cheese, shredded (1 cup)

8 ounces cream cheese, softened

2 tablespoons mayonnaise

1 tablespoon port (try Wente Vineyards Port)

1 garlic clove, minced

½ cup pecans, toasted and chopped fine

1. Process cheeses, mayonnaise, port, and garlic in food processor until smooth, scraping down sides of bowl as needed, about 1 minute. Transfer cheese mixture to center of large sheet of plastic wrap.

2. Holding corners of plastic in your hand, twist cheese mixture with your other hand to seal plastic and shape cheese mixture into rough ball (mixture will be somewhat loose). Refrigerate until firm, about 3 hours. (Cheese ball can be refrigerated for up to 2 days.) Once cheese ball is firm, reshape it as necessary into smooth sphere. Unwrap cheese ball and roll in pecans. Let sit at room temperature for 15 minutes before serving.
