2011 Small Lot Cabernet Franc
This Cabernet Franc has wonderful aromas of chocolate, mint, and thyme. Plum, chocolate and black olive flavors, medium acidity, and lingering tannins round out this sumptuous wine.
The Cabernet Franc was harvested from the Sacchau block, the Cabernet Sauvignon was harvested from the Smith block and the Petite Verdot was harvested from the Sacchau block.
Fermentation was completed in open-top fermenters and punched down twice daily. The grapes were then gently pressed leaving any possible bitter tannins behind.
Malolactic fermentation was initiated and completed in barrel, prior to aging for 20 months in French, Eastern European, American, and neutral oak barrels.
