Riva Ranch Chardonnay and One Pan Chicken Thighs

In celebration of the launch of our new Wente+ wine subscription service, we partnered with chef and culinary stylist, Ashton Keefe, to bring you personalized recipes for our Wente+ wines.

The second pairing we are bringing to you is Riva Ranch Chardonnay and One Pan Chicken Thighs. With grapes as an essential ingredient, we thought it would be the perfect dish to celebrate the close of the Wente Vineyards harvest. Enjoy this beautiful, home cooked meal as the nights begin to turn colder and raise a glass to your new season.

I love this recipe. To me, the aroma of roast chicken symbolizes home, family and love. What’s even better is that ingredients can be substituted for shallots, lemon and garlic. Or make it a party and invite all the ingredients – and your friends.


Wente Foil
One pan chicken AK4

Ingredients (Serves 4)

1 - 2 tablespoons extra virgin olive oil

2 teaspoons fine sea salt

2 lb. chicken thighs

4 cloves garlic, smashed

1 bunch grapes

1 cup pitted olives

1 bunch of thyme on the stems

2 tablespoons unsalted butter

1 cup Wente Riva Ranch Chardonnay

Preheat oven to 425° F.

Heat olive oil in a large, ovenproof skillet over medium high heat. Pat chicken dry using a paper towel and season with salt. Sear chicken skin side down until golden brown, 4 - 5 minutes. Flip chicken and add garlic, grapes, olives, butter and wine.

Place pan in the oven and cook for additional 15 minutes until the juices run clear and chicken’s internal temperature is 165° F.

Serve chicken on a plate or shallow bowl. Scoop wine butter sauce, olives and grapes over the top. Compliment with a fresh baguette for dipping and glass of Wente Vineyards Riva Ranch Chardonnay.
