Southern Hills Cabernet and Standing Rib Roast

In celebration of the launch of our new Wente+ wine subscription service, we partnered with chef and culinary stylist, Ashton Keefe, to bring you personalized recipes for our Wente+ wines.

The final pairing we are bringing to you is Southern Hills Cabernet and Standing Rib Roast . This hearty dish is perfect for the holidays however you decide to spend them. Permeating the room with fresh rosemary, garlic, and the undeniable scent of seared roast, this recipe exudes warmth and comfort this holiday season.

This is a class for entertaining but it really can be enjoyed on a lesser scale as well when entertaining for a smaller crowd – or even two! Ask your butcher to do one or two ribs of a standing rib roast for your next night in.

Standing Rib Roast

Wente Foil
Finished roast

Ingredients (Serves 4)

1 2-3 lb. rib roast, generally with 1-2 “ribs”

Salt

Pepper

Extra virgin olive oil

7-8 cloves garlic, smashed

Herbs such as thyme or rosemary

2-3 tablespoons butter

1 cup Wente Vineyard Southern Hills Cabernet Sauvignon


Directions

Wente Foil

Preheat oven to 350° F. Season beef with salt and pepper.

Heat a large oven safe skillet or pan over medium high heat and sear steak fat cap side down (if it has one) for 3-4 minutes until golden brown. Flip and repeat for both sides.

Add garlic, herbs, butter and Wente Vineyard Southern Hills to the pan and place in the oven for an additional 15-20 minutes or until the internal temperature reads 135° F.

Remove meat from the pan and allow it to rest for 10-15 minutes before slicing. Serve with Wente Southern Hills Cabernet.
