Tasting Notes
The 2019 Cabernet Sauvignon is fully packed with notes of black cherry and red plums from front to back and its optimally ripened fruit is decked out with a generous measure of French oak spice including toasted vanilla bean, polished mahogany, and a hint of clove and winter spice. It is fleshy and full on the palate with a hint of acidity while also displaying a solid structure with plenty of Cabernet tannins. Enjoy with a medium-rare grilled Filet Mignon, twice baked potatoes, and cooked spinach with bacon bits.

Fermentation And Aging
The grapes were fermented small stainless steel tanks where they were pumped over three times daily to maximize color and extraction of flavors. The wine was then aged for 22 months in new French oak barrels.
