Fermentation And Aging

All varieties were fermented in small stainless steel tanks and pumped over three times daily. Aged separately in new and neutral French oak barrels for 7 months, then the wine was blended and rebarreled for an additional 7 months in 38% new French Oak and 62% second and third use barrels
