Fermentation And Aging

Fermentation took place in small stainless steel fermenters where the grapes were gently pumped over twice daily to aid in the extraction of texture, flavor and aromatics. This wine was aged for 19 months in 37% new French Oak barrels, and 63% Neutral French Oak barrels.
