Instructions

1
Prepare the Steak: Bring your steak to room temperature, about 30 minutes before cooking. Pat it dry with paper towels to ensure a crisp sear.
2
Heat the Skillet: Preheat a cast iron skillet over medium heat for 3-5 minutes. Once hot, add olive oil and swirl to coat the pan.
3
Season the Steak: Season both sides of the steak generously with kosher salt and freshly ground black pepper.
4
Sear the Steak: Place the steak in the hot skillet. Sear for 3-4 minutes on each side, until a golden-brown crust forms. Adjust the searing time based on steak thickness and desired doneness. For medium-rare, 3 1/2 minutes per side is typically ideal.
5
Add Butter and Herbs: Lower the heat slightly. Add butter, garlic, rosemary, thyme, and sage to the skillet. Baste the steak with the herb-infused butter by tilting the skillet slightly and using a spoon to repeatedly pour the melted butter over the steak for 1-2 minutes.
6
Rest the Steak: Remove the steak from the skillet, topping it with the garlic and herbs. Let the steak rest for 5 minutes before slicing to retain the juices.
7
Serve: Slice the steak and serve it with your choice of sides—garlic mashed potatoes, a fresh salad, pasta, or rice. Pair it with a glass of Aly’s Pinot Noir for an unforgettable meal!
