Lunar New Year Oxtail Pho Recipe Pairing

We are excited to collaborate with Tina Le, also known as @AllTinaaThings, to showcase our Southern Hill Cabernet Sauvignon with her recommended Lunar New Year recipe wine pairing. “Like many, one of our Lunar New Year traditions is getting together and enjoying flavorful home-cooked meals, so I am preparing a delicious Wine-Braised Oxtail with Rice Noodles this year. This unique Vietnamese French recipe I ate growing up is both modern and traditional, which pays homage to my ethnicity. The dish is simple, yet extremely important to pair with a wine that is just as rich as the meat cut – Wente Vineyards’ Southern Hills Cabernet Sauvignon is just the right one! Ingredients

2 bottles of Southern Hills Cabernet Sauvignon (1 to cook and 1 to pair)
2lbs of oxtail
1 large yellow onion, finely chopped
4 cloves of garlic
2 large carrots, chopped to biting size
Thyme and bay leaves
2 tablespoons of butter
4 portions of fresh or dry (soak in warm water for 10-15 mins) rice noodles
Salt and pepper to taste

Instructions

Brown the oxtail with butter for about 5 mins.

Add all ingredients together (including a full bottle of Wente Vineyards’ Southern Hills Cabernet Sauvignon).

Bring to boil and reduce heat to simmer for 3 hours.
