Tomato, Feta & Fresh Herb Salad

Fresh, colorful, and full of Mediterranean-inspired flavor, this tomato and feta salad brings together juicy ripe tomatoes, creamy feta, peppery greens, and plenty of fresh herbs. A simple lemon and olive oil dressing keeps everything bright and refreshing, making it an effortless side dish for warm-weather meals and casual entertaining.

Ingredients

4 large ripe tomatoes, cut into wedges or chunks
1 pint cherry tomatoes, halved
6 oz feta cheese, crumbled into large pieces
2 cups arugula or mixed baby greens
½ cup fresh basil leaves, roughly torn
¼ cup fresh parsley leaves, roughly chopped
¼ small red onion, very thinly sliced
3 tbsp extra-virgin olive oil
1½ tbsp fresh lemon juice
1 tsp red wine vinegar
½ tsp dried oregano
Salt + pepper

Instructions

Prepare the tomatoes Add the tomatoes to a large serving bowl, season lightly with salt, and let them sit for 5–10 minutes to release some of their juices.

Make the dressing Whisk together the olive oil, lemon juice, red wine vinegar, oregano, and a few grinds of black pepper.

Build the salad Add the arugula, basil, parsley, and sliced red onion to the tomatoes.

Dress the salad Pour the dressing over the ingredients and gently toss until everything is lightly coated.

Add the feta Scatter the feta over the top, keeping some larger pieces intact for texture.

Finish and serve Drizzle with a little extra olive oil, add freshly ground black pepper, and serve immediately.
