A Carrot Chiffon Cake for Rosé Season

Spring is in the air—and on our plates. There’s something undeniably special about the return of seasonal gatherings, fresh blooms, and of course, Easter gatherings. And when it comes to the perfect dessert pairing for the season, we’ve found one that sings with springtime flavors and pairs beautifully with our 2024 Niki’s Rosé. This light and spiced carrot chiffon cake, created by the talented Angie of @Spoonful.Tian, is everything we love about the season in one bite: soft, airy texture; warm cinnamon spice; the crunch of toasted walnuts; and a dreamy layer of whipped cream. It’s the kind of treat that feels both elevated and effortless—exactly the energy we’re channeling this time of year.

Ingredients

¾ cup flour
⅓ cup neutral oil
3 tbsp milk
5 tbsp walnuts, chopped
½ cup carrot, finely chopped
2 tsp cinnamon
5 eggs, separated
¼ cup sugar

Instructions

Preheat oven to 305°F.

In a large bowl, whisk together oil and milk. Add in flour, cinnamon, walnuts, and carrots. Stir until no dry spots remain. Mix in the egg yolks until combined.

In a separate bowl, whip egg whites on medium speed until foamy. Slowly add sugar in three parts and continue whipping until medium-stiff peaks form.

Fold ⅓ of the meringue into the egg yolk mixture. Once combined, gently fold the mixture back into the remaining meringue.

Pour the batter into an 11×11-inch pan. Tap lightly on the counter to remove air bubbles.

Bake at 305°F for 30 minutes, then increase to 345°F and bake for another 5 minutes. Let cool.

Slice the cooled cake in half, add the cream between the layers, and cut into four individual servings.
