Ingredients

For Salmon

2–4 salmon fillets (about 6 oz each)
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter

For Piccata Sauce

2 cloves garlic, minced
½ cup chicken broth (or vegetable broth)
Juice of 1 lemon
2 tbsp capers, drained
2 tbsp butter
1 tbsp flour or cornstarch (optional for thickening)
1 tbsp chopped parsley
Lemon slices, for garnish

For Serving

Cooked orzo pasta
Fresh green beans, lightly sautéed or steamed

Instructions

Prepare the Salmon: Pat salmon fillets dry and season generously with salt and pepper. Heat olive oil in a skillet over medium-high heat. Add salmon skin-side down (if applicable) and cook for about 4–5 minutes per side, until golden and cooked through. Remove from pan and set aside.

Make the Piccata Sauce: Lower heat to medium. Add butter and garlic to the skillet and sauté for 30 seconds until fragrant. Stir in broth, lemon juice, and capers, scraping any browned bits from the pan. Let simmer for 2–3 minutes. For a slightly thicker sauce, whisk flour or cornstarch with a splash of water and stir in. Finish with butter and fresh parsley.
