Peach & Whipped Goat Cheese Crostini

Ingredients

8 oz goat cheese, softened
4 oz cream cheese, softened
1 tbsp fresh lemon juice
1 tbsp olive oil, plus more for brushing
1 tbsp honey
¼ tsp salt
1 loaf sourdough bread, sliced
2 ripe peaches, thinly sliced
2–3 tbsp hot honey, for drizzling
¼ cup pistachios, roughly chopped
2 tbsp fresh mint, thinly sliced

Instructions
