There is plenty of sweet oak that showcases baked cinnamon and vanilla bean which perfectly compliments the abundant candied red cherry and dried fruit flavors.

Fermentation And Aging

All varietals were fermented in small stainless steel tanks with pneumatage twice a day to gently extract all the aromatics and flavors. Aged for 18 months in 80% new French oak and 20% second use French Oak barrels.
