Fermentation And Aging

The wine was fermented in small stainless steel tanks, with pneumatage performed twice daily to maximize the extraction of flavors, aromas, and textures. Following fermentation, it was aged for twenty months in French oak barrels, 40% of which were new and 60% second-use, to enhance complexity and structure.
